pennsylvania dutch corn pie

This pie is something that my mom makes for us every year. She doesn't use a recipe, she just has it all in her head. So I did my best to get it all written down for you to enjoy. 

It's a simple recipe with basic S&P for seasoning. It easy. You can make this even easier if you use pre-made pie crust. But if you know me, you know that I love to make a yummy pie crust. I have included that recipe below for you. My kids love the pie crust recipe, because I don't use any egg so they get to play & eat the left over dough. 

Perfect recipe for one of those rainy, cold, fall days that you just need a little comfort of home to serve up to your family.

RECIPE: 


Ingredients:

for the pie:  

1 bag (16 oz.) frozen corn 
3 medium potatoes 
1/2 cup celery - chopped fine 
3 hard boiled eggs - chopped 
1 tsp. salt {to taste}
1/2 tsp. pepper {to taste}
pie dough for a 2 crust pie {pre made or homemade}
4 T. butter 
1-l/2 cups milk, slightly scalded

for the crust: 

 1 1/2 all purpose flour
1 teaspoon salt
8 tablespoon butter {1 stick}- shredded
1/4 cup ice water 



Instructions: 

1. Cut the potatoes  into small cubes and cook until nearly tender.
2. Near the end of the cooking time, add the chopped celery and frozen corn to the potatoes and cook for a few more minutes to barely soften the celery. Drain the water thoroughly.
3. Add the chopped hard-boiled eggs, salt & pepper. Stir to mix well.
4. Roll half the pie dough and place it in a deep dish 9" or 10" pie pan. Add the corn mixture.
5. Melt the butter; add it to the scalded milk. Pour the milk and butter mixture over the other ingredients in the pie dish, but keep the level of the milk at least 1/2 inch below the top of the pie dish. Keep left over milk/butter to pour over the served slices. 
6. Roll the remaining pie dough and place it on top of the pie. Pinch the top and botton crusts together along the edge. Cut slits in the top crust, as shown.
7. Place the pie on a cookie sheet and bake at 375ยบ for 45 minutes. Remove from the oven let stand for about 5 minutes before cutting and serving. Serve the reserved milk and butter mixture with the pie to pour over individual servings.
Homemade Pie Crust instructions: 

1. Add flour, salt together and mix
2. Grate the butter onto the four mix
3. Blend using your hands until small pieces begin to form. 
4. Add cold water, and continue to mix with your hands until dough has form, like photo above. 

***Dough should not be sticky, if you need to add flour to your dough, add it 1 tsp at a time.
