peanut butter sandwich cookies

Peanut butter cookies always have a special place in my heart! They are fairly easy to make and my 9 year old has helped me for years with this recipe. He has two special jobs, using the fork to make the pattern on top, and to sprinkle them with sugar before they go in the oven. 

On the other hand the rest of my kiddos, run around playing, oblivious to whats happening while I am mixing these up...until that smell hits the kitchen and carry's down into the play room. Thats's when everyone knows, moms making peanut butter cookies & overtime without fail they flock to the oven to watch them bake. They bake very fast so if you are experiencing some "hangry" children, you can whip these up in no time & have happy little angels {can't promise that one, lol}.

INGREDIENTS: 

For the Peanut Butter Cookies: 
- 1/3 cup unsalted butter , softened to room temperature
-1/3 cup smooth peanut butter , not natural or homemade
-2/3 cup packed brown sugar , light or dark
-1 large egg
-1 teaspoon vanilla
-1 cup all-purpose flour spooned & leveled
-1/2 teaspoon baking soda
-1/4 teaspoon salt to taste

For the Frosting: 
-purchase pre made buttercream from Target {pictured above & who doesn't LOVE target}
-cocoa powder for chocolate frosting
-strawberry preserves or raspberry preserves for a fruity frosting. {be careful not to add too much, add small bits at a time, adding too much will make the frosting curdle, EW ;)}

INSTRUCTIONS: 

1. Mix butter, peanut butter and sugar until combined well. 
2. Add egg and vanilla & mix in. 
3. Add flour, baking soda and salt. 
4. Use a small cookie scooper and drop on cookie sheet, find a helper to do your criss cross fork design. 
5. Sprinkle with sugar
6. BAKE at 350 degrees for 7-9 minutes. 
7. You can allow cookies to cool and eat them plain with a cup of coffee, SO YUMMY! 
8. OR you can mix up frosting to put in-between & make a sandwich.
